I know you are probably thinking what makes this the best guacamole recipe. Let me tell you! There are two ingredients that I use that makes this the best guacamole recipe. Shrimp and cotija cheese! Guacamole recipes can differ and that is what I love about cooking – you can add your own ingredients to excite your taste buds.
1 small onion
2 roma tomatoes
1/4 cup of crumbled cotija cheese
10-12 shrimp (optional)
pinch of salt
First clean and and de-vein the shrimp, place into a bowl and squeeze 1 whole lemon into the bowl. Cover and place in the fridge.
Dice the roma tomatoes, jalapeño and onion.
Cut the avocados in half. Take the half of the avocado and slice horizontally then vertically. Gently squeeze the avocado and the diced pieces will fall into the bowl.
By gently squeezing the bottom all the diced avocado pieces fall into the bowl and there is no mess. This is mess free!
Add all the chopped veggies and this is when you add my secret ingredient- COTIJA Cheese! Then squeeze 1 whole lime into the bowl. The lime will also keep the guacamole from turning brown. Add a pinch of salt. With a spoon mix all together.
Remember the shrimp I drenched in lemon juice? Take them out of the fridge. The shrimp are pink and have cooked up in the lemon juice. Add the shrimp on top of the Guacamole bowl and then drizzle a bit of Tajin over them.
