Tacos de Papa {potato tacos}

This meal is one of my go-to meals for sure! When I’m not sure what to cook or I forgot to take out meat to defrost, this is a meal my family really enjoys. Tacos de Papa are tacos filled with mashed potato with cheese. YUM! I can also make these the day before and have them in a Ziploc bag in the refrigerator ready to go for the next day.

TACOS DE PAPA {potato tacos}


1/2 C  Mexican Cheese

1/2 C of grated cotija cheese

4 0r 5 potatoes

1. Wash, peel and cut potatoes. Place them into a pot and fill with water and cook thoroughly.

2. Add 1/2 Cup of Mexican cheese blend and 1/2 Cup of Cotija Cheese. Mash the potatoes and cheese until all the cheeses are blended. Add salt to taste.

3. Place tortillas in the microwave for about 2 minutes so they become soft and you can roll them up into a taco.

4. Place some potato mixture on the tortilla and roll the tortilla over so it looks like the picture and place them onto a plate. Repeat over again.

This is what your tacos should look like. If you are not going to immediately fry the tacos you can place them into a ziploc bag and save them for the next day. I do this pretty often and it saves so much time.

5. Heat a skillet and add 1/4 cup of cooking oil and begin to fry the tacos. Make sure to rotate each side and when they are all crispy the tacos are cooked.  A quick tip for placing the tacos after I cook them- I place a colander with napkins in it, over a plate like the picture above.

When you’re ready to serve the tacos you can have some lettuce, sour cream and Fire Roasted  Green Salsa. You can really add any toppings your family enjoys. These are really tasty!
