Salsa de Nopales Recipe {Cactus Salsa}

Have you ever heard of Nopales?  If you haven’t, it’s a form of cactus plant that is edible and at the same time very good for you.  This Salsa de Nopales recipe (Cactus Salsa)  is one that you will want to try for sure. Nopales are used in many dishes in Mexican cuisine and is used in many different ways. It can be made with eggs, soups, blended for juicing and of course -Salsa!  This Salsa de Nopales recipe (Cactus Salsa)  is low in fat and high in fiber – and of course, no cactus needles.

Ingredients

1 lb Nopales

3 Tomatoes

2 Jalapeños

1 Small Onion

1 Lemon

Cilantro

salt and pepper to taste

 Open package and and throughly wash and rinse the nopales in a colander in the sink.

Once the nopales are washed, place the nopales in a pot with water and 1/2 an onion and bring to a boil. In about 15-20 minutes the nopales will be soft.

While the nopales are cooking, dice up the jalepenos, onion, tomatoes and cilantro. Place all ingredients in a bowl. Once the nopales are soft rinse with cold water and add to them to the bowl with the rest of the mixture. Cut a lemon in half and squeeze the lemon juice into the bowl. You can use limes as well.  Add a sprinkle of salt and pepper and mix well. Doesn’t it smell so good?!?
