The other day I was craving french fries and roasted salsa. Well, I made some Mexican Street French Fries with red roasted salsa and it was so unbelievably tasty. Making these Mexican Street French Fries reminds me of my Aunt and anytime I was craving anything she would just make it. I guess she has passed that on to me. I’m grateful to her for teaching me some of her cooking skills.
1/2 cup grated cotija cheese
1/4 cup red roasted salsa
1/4 cup of ketchup
Start to preheat your oven to 425 degrees. Then take 3 potatoes wash well and cut off the ends. It makes so much easier to slice the through the potato.
Slice down through the potato and then slice again about 1/4 of inch to create your french fries.
Place the sliced potatoes into a bowl and drizzle some olive oil. Move them around with your hand to make sure they a coated with olive oil.
Spray your cookie sheet with non-stick spray. Spread out the french fries evenly. Place into the oven for 15 minutes and then take them out flip over and place back into the oven for another 15 minutes. While these are cooking make your dip. Mix 1/4 cup red roasted salsa and 1/4 of ketchup.
When the fries are done add chopped cilantro and cotija cheese and serve with the red roasted salsa ketchup. Mexican Street French Fries are done.
