It’s fall, right!?!? Well, here in sunny Southern California there has been no signs of autumn yet – sunshine and 90-degree weather. I’m so wanting cooler weather and definitely some rain would be nice as we are experiencing the worst drought ever.

I have been wanting fall weather so I made some autumn flavor in my kitchen. Easy Vegetable Soup! This Easy Vegetable Soup is so simple and you may have some of these staples in your pantry or freezer already. Trust me, this Vegetable Soup is absolutely delish and you will never eat canned soup again.

Ingredients

1 small onion diced
handful chopped parsley
1 1/2 cups diced carrots
1 1/2 cups frozen green beans
1 1/12 cups frozen peas
3 small potatoes cubed
1 can of kidney beans
1 can of tomato sauce
1 T of concentrated tomato paste
2 boxes of chicken broth
1 bay leaf
1 Teaspoon dried basil leaves
1 Teaspoon dried thyme

Place diced parsley and onion into pot and cook until soft.

Add 1 T of concentrated tomato paste, stir then add the 1 can of tomato sauce.

Add the 2 boxes of chicken broth.

Add veggies and can of kidney beans. (Drain and rinse the kidney beans before adding.) Then add the dried bay leaf, basil and thyme. Bring to boil then simmer for about 20 minutes.

Ingredients

  • 1 bay leaf
  • 1 Teaspoon dried basil leaves
  • 1 Teaspoon dried thyme

Instructions

  1. Place the onions and parsley in a large pot. Mix until tender
  2. Add the 1 T of concentrated tomato paste, stir then add the can of tomato sauce.
  3. Add the 2 boxes of chicken broth then all the veggies.
  4. Drain and rinse the kidney beans then add them to the soup.
  5. Lastly, add the basil, thyme and bay leaf.
  6. Bring to boil then simmer for about 20 minutes.
