If you have frequented my blog you know that we are always on the go. I like to make quick meals that require little or no prep time and if it’s a one-dish meal even better. My family absolutely loves tacos so I made a crunchy taco casserole. This dish turned out to be very delicious and the familia gave it a thumbs up!
Crunchy Taco Casserole
2 lbs of ground beef
1 bag of chips
1 can of black beans
2 packs of any taco seasoning
3/4 cup of mexican blend cheese
Preheat oven to 375 degrees. Finely chop an onion and heat a skillet. Place the ground beef and onion in the skillet and cook throughly. Add salt, pepper or any other seasoning that you prefer to season with.
Drain the can of black beans and add to the skillet and mix around the beef and black beans. Add 2 packs of taco seasoning and mix according to package and mix again to stir all the ingredients together. Remove from heat and set aside.
Use a casserole dish and spray the casserole dish with some nonstick spray. Let’s start layering our crunchy taco casserole. Place the tortilla chips around the bottom of the casserole dish so the bottom is completely covered. Next, scoop the beef mixture on top of the tortilla chips and spread to cover the chips. Repeat one more time. Finally, add the 3/4 cup of cheese to the top of the casserole. Place in oven until the cheese has melted.
While the Crunchy Taco Casserole is in the oven cut up the tomatoes, lettuce and the avocados. If you want, you could add this fresh pico de gallo salsa instead of the tomatoes – it will be so yummy!!
This is fresh out of the oven – looks so delicous!
Serve it up with some extra chips on the side and enjoy!
