The first of the big eating holidays is behind us and we did enjoy Thanksgiving. As most of you know I love food and boy am I’m paying for it now. I might of have gained 2 pounds but my scale is such a liar!! After all that turkey and stuffing I was craving Chilaquiles Verdes over the Holiday weekend with my cafecito. It’s one of my all time favorite breakfast foods. So, I decided that I would make Baked Chilaquiles Verdes and the flavor was insanely the same! I still love to eat but I don’t want to sacrifice the flavor of my food.
1/4 cup of cotija cheese
1/2 cup of Green Salsa–>get salsa recipe here. Salsa ingredients listed below.
4 green tomatoes
2 cloves of garlic
First preheat your oven to 400 degrees. Then begin slicing the 6 tortillas into triangles.
Place cut tortillas onto cookie sheet and drizzle some olive oil and salt over the tortillas. Bake for 15 min the flip the tortillas strips over to crisp the other side then bake for another 15 min.
Take the 1 1/2 cups of Green Salsa and place into a pot. I add 1/4 cup of water and a 1 Teaspoon of Knorr Chicken flavor the stir. Bring to a boil then simmer.
Once the green salsa has come to a boil add the baked tortilla chips and gently mix. Serve onto a plate and add chopped onions, cotija cheese and sour cream. YUM! Baked Chilaquiles Verdes with less fat and a whole lot of flavor.
